Nailed It! Lemon Beehive Cake

Welcome…I’m so happy you’re here…and so happy to share this fun post with you!  Let’s begin…with a bit of backstory.  Tim…our nine-year old grandson…has loved to work in the kitchen with me since he was super small.  We’ve done everything from gingerbread houses to scarecrow cookies to Halloween cupcakes…and I’ve LOVED every minute of it.  As he’s gotten a bit older…however…he’s become a bit stingy with his time in the kitchen.  He still likes to taste everything…but the helping part…not so much.

 

Last fall Tim introduced me to the fun Netflix show, Nailed It!  Amateur contestants are challenged to recreate dessert masterpieces…and the challenge winner earns $10,000.  Tim is convinced that I should appear on Nailed It!…and in his words “so you can get $10,000…and maybe you could buy me a mini bike”.  So funny…right?  Well…Tim’s interest in this show got me to thinking that the Nailed It! format might be a way to get him back into the kitchen with me a bit more.  He agreed (I was thrilled)..and our very own Nailed It! was born.

 

We looked through my (many) pans, cutters and sprinkles for our first challenge…and Tim chose the Lemon Beehive Cake.  It seemed like a pretty simple first project…and a good chance for Tim to brush up on his baking skills…and perhaps an opportunity for him to learn a few new ones, too.  See…

 

 

looks good, right?  Perfect for a first challenge…and the cake recipe is right on the back of the pan cardboard, too!  Oh…and see that smile?  In my opinion that smile alone is worth far more than $10,000!

 

Tim worked super hard here…and I felt more like his assistant than the other way around.  He cracked eggs…

 

 

scooped batter into the pan…brushed the warm cake with honey lemon glaze…added the buttercream…put the sides together…and filled in the seam.  And then…we hit a bump in the road.  We’d planned on using fondant for the bees…but Tim seriously DOES NOT LIKE fondant.  And so…it was Stampin’ Up! to the rescue for Plan B.  I grabbed the Detailed Dragonfly Thinlits dies and cut several bees in Basic Black…and used the 1/2″ Circle Punch and a bit of Crushed Curry cardstock to fill them in.  They were the perfect size…and while we weren’t planning to eat them…Tim said they’d probably taste better than fondant.  Ha!

 

 

All we had left to do was add the Royal Icing…and our bees…and we were done!

 

 

Tim presented his cake to the rest of the family.  Just look at how proud he looks…

 

 

and we all agreed…he Nailed It!
